some easy recipes- maybe have a potluck-makes it easy on everyone. Assign people a dish type-dessert, vegetable, ect, so you don't have everyone bringing the same type food. The 'pot lux' disposable covered dishes are great for potluck dinners, too-no dish to try and keep track of. You can buy them at any grocery or discount store.

CHICKEN-WILD RICE CASSEROLE

1 1/2 to 2 cups cooked wild rice
1 10 1/2-oz. can cream of mushroom soup
1/2 soup can of milk
2 cups cooked chicken, cut up
1/4 cup chopped green pepper
Salt and pepper to taste

Preheat oven to 350 degrees. In a mixing bowl, combine all ingredients. Pour into a greased 2-quart baking dish and bake for 30 minutes.

SERVES HOW MANY: 6

TAKES HOW LONG TO MAKE: 30 minutes


GREEN BEAN CASSEROLE


1 can cream of mushroom soup (I use Campbell's)
3/4 cup milk
2 cans french-cut green beans, drained
1 can fried onions (I use French's French Fried Onions)
Salt and pepper to taste

In a casserole dish, mix all ingredients except 1/2 can of fried onions. Bake in a 350-degree oven for 30 minutes. Remove from oven and stir. Sprinkle remaining onions on top, and bake 5 minutes more or until onions are golden.

SERVES HOW MANY: 6

TAKES HOW LONG TO MAKE: About 45 minutes


SAUSAGE, PEPPERS AND ONIONS


4 lbs. Italian sausage, cut into 1-inch pieces
1/4 cup olive oil
2 red bell peppers, chopped
2 green bell peppers, chopped
2 medium onions, chopped
1 tsp. oregano
1/2 tsp. black pepper

In a large skillet over medium heat, fry sausage in oil until brown (about 10 minutes). Remove sausage from skillet. Next, place peppers and onions in skillet and sauté until tender (about 10 minutes). Return sausage to skillet, add oregano and pepper, and mix well. Cook for 2 to 3 minutes and serve.

SERVES HOW MANY: 6 to 8

TAKES HOW LONG TO MAKE: About 30 minutes

EASY CHINESE NOODLES


1 lb. spaghettini

SAUCE 3 tbsp. sesame oil
3 tbsp. soy sauce
1 tbsp. balsamic vinegar
2 tbsp. sugar
2 tbsp. kosher salt
1 tsp. chili oil (optional)
4 tbsp. scallions, chopped

Cook spaghettini according to package directions. Drain and pour into a large bowl. In a small bowl, mix sauce ingredients. Pour over cooked spaghettini, toss and serve.

SERVES HOW MANY: 6 to 8

TAKES HOW LONG TO MAKE: About 5 minutes to prepare
